These almond cookies were popular among the items which my mother sold. They differ from the flat, brown almond cookies you receive at the end of a meal in some Chinese restaurants. Instead, these look like big toes because of the quartered almond pressed in the middle of each pudgy round cookie. Aunty Paddy made them too and gave me a few tips. One essential note is to snip the tips off each almond so that they do not burn during baking.
