While almost all the other cookies are sweet, cheeselets provide a savoury alternative. They are baked in thin strips so that the cheesy taste does not become too overwhelming. My mother used a special serrated cutter or fluted pastry wheel that produced zig-zag edges along the strips. You could simply settle for a knife to cut them into straight strips.
