This is an adaptation of the large round sugee biscuits I often saw in the Indian corner shops that sold candies and newspapers. They contain ghee which can be found in Indian grocery shops and is essentially clarified butter. Sugee is another term for semolina and it provides a wonderful texture to the biscuits, making them creamy and nutty at the same time. My mother was partial to the QBB brand.
