My mother made this for every reunion dinner on the eve of Chinese New Year. They were also popular at the buffet parties. Individual chicken parts were sealed in a parchment paper envelope and fried in a big wok of hot oil. While most recipes would recommend discarding the paper envelopes before serving, my mother left them intact. The family members would then play a guessing game of which chicken part we got when we opened our envelope.
