Soto ayam is a sensational soup. It gives a warm spicy kick in the belly like a chicken soup on fire. I like to dunk a bergedil in the soup to make it hearty.

Ingredients

Soup

  • 1 whole chicken, about 1.4 kg or 3 pounds
  • 4 tablespoons coriander seeds (ketumbar)
  • 1

Method

  1. Rinse chicken and pat dry. Place in a large pot and cover with cold water. Bring to a boil until chicken is tender and well-cooked. Transfer the chicken to a platter and let cool. Meanwhile, reserve the stock. Shred the chicken meat.
  2. Grind the coriander seeds, white peppercorn, cumin, candlenuts, galangal, ginger, turmeric, lemon grass, garlic and shallots.
