We used big prawns (shrimps) with their shells intact. Prawns (shrimps) were considered expensive so my mother sometimes rationed us to two or three. This chilli paste can also be applied to fried chicken wings.

  1. Rinse the prawns and pat dry.
  2. Remove the stems from the dried and fresh chillies. Pound or blend the chillies, along with the belachan, until fine.
  3. Heat a sauté pan and add half of the vegetable oil. When the oil is hot, fry the prawns until they turn bright fiery red. Using a slotted spoon or tongs, transfer the prawns to a plate.
