This is a common dessert, it comes in a pink or green bottom layer and an opaque white top. Back then, we did not have the abundance of premium ice cream for dessert. So the closest we could get to a convenient after-dinner dessert was agar agar.
For the green layer, combine the sugar, water and pandan leaves in a saucepan and bring to a boil. Add in the agar agar strips. Stir until the sugar and the strips are fully dissolved. Remove the knotted pandan leaves. Strain through a colander to remove lumps. Add the green food colouring. Pour the mixture into a round tin about 30 cm or 12 inches in diameter. Leave to
