  1. For this recipe you will only succeed if you can find snails which have retired into their shells to hibernate through the winter. Remove the hard ‘front door’ (operculum) with the point of a knife, wash the snails in plenty of water, disgorge for 2 hours with a handful of dry sea salt, then rinse. Put them in a saucepan
