Method

Preparation and cooking

  1. Clean, gut and fillet the fish and place, skin side down, in a wide shallow pan. Cover with the court-bouillon, salt if necessary and simmer over a gentle heat for 3 minutes. Take out the fillets, let them cool and drain, then lift off the skin and put them on a serving dish.
