Method

  1. Choose four bright-eyed whiting, clean and gut them and trim the tails and fins with a pair of scissors. Wash them and dry them with a cloth. Make small incisions of 5 mm (¼in) every 2 cm (¾in) on both sides of the fish and season them with salt and pepper. Then dip them in milk and roll them in flour.
