  • 1 chicken weighing 1.5 kg (3 lb 6 oz)

Method

  1. Take the first five herbs, parsley, chervil, tarragon, basil and mint, and remove the stalks. Wash the herbs, drain and dry them in a cloth. Slice up a third of these herbs and mix thoroughly with 180g (6½ oz) softened butter, adding salt and pepper and the lemon juice.
