  1. Choose a hare under six months old, known as ‘trois quarts’ because it is from one of the first litters of the year. At this age, it should weigh between 2.4 and 2.9 kg (5 lb 6 oz and 6½ lb) and certainly not more than 3 kg (6 lb 12 oz).
