Method

The Wild Boar

  1. Ask your game merchant to prepare 8 cutlets from a young boar of 30 to 40 kg (66 to 88 lb). Get him to cut off excess fat, to remove the chine bone, leaving just the rib bone, and to beat the cutlets to flatten them slightly. Also get him to chop up the trimmings and bones for you.
