  • 4 slices, weighing 120 g ( oz) each, of Roanne ham

Method

  1. First prepare the vegetable spirals, (see steps 1 and 2).
  2. Sauté the slices of ham in a frying-pan with 20 g (¾ oz) butter until golden on both sides and then arrange on a serving dish.
  3. Heat 2½ tablespoons water in a small pan and, over a high heat, whisk in the butter cut in small pieces until completely emulsified.
