Method

  1. Choose a green cabbage or, out of season, a savoy. Separate all the leaves, discard most of the stalks and wash thoroughly. Blanch in boiling salted water for 10 minutes, refresh in cold water, drain and turn out onto the working surface. Cut the leaves across in both directions with a large knife, so that they are very coarsely chopped.
