  • 4 lettuces with good hearts
  • 150 g ( oz) white homemade type bread, crusts removed

Method

  1. Choose round cabbage lettuces, trim the base to a point to stop the leaves coming off and discard any wilted leaves. Wash the lettuces carefully, blanch for 5 minutes in plenty of boiling salted water and refresh by plunging them into a bowl of cold water.
