  1. Choose two very fresh cucumbers. Cut off the two ends and divide each into 4 pieces 7 to 8 cm (about 3 in) long. Peel them and with a very sharp fine-bladed knife, cut lengthwise into very thin, even slices about 2-3 mm (⅛ inch) thick at the most, and then into julienne strips. Discard the pips. Wash the cucum
