  • 12 tomatoes, weighing about 1.5 kg (3 lb 6 oz) altogether

Method

  1. Take 8 of the tomatoes and plunge them into a pan of boiling water for 30 seconds. Refresh them in cold water and skin. Cut them across in two, and squeeze them gently in the palm of your hand to remove the pips. Cut them into small even dice.
