  1. Use large vegetables for this dish. Cut the turnips into 2 cylinders 6 cm (2¼in) long and trim them. Using a very sharp, fine-bladed knife, peel off as long a ribbon as possible round each cylinder. Don’t worry if it breaks because it can still be used.
