Method

  1. Take off the rind and cut the bacon into little lardons. Blanch them in a pan of boiling water and drain well.
  2. Plunge the tomatoes into boiling water, skin them, cut them in two across and squeeze out the pips and excess moisture. Press the tomato pulp through a fine sieve.
  3. If you don’t want the bother of making the noodles, they can be bought ready-m
