Method

At least two hours in advance

  1. Melt 20 g (¾oz) butter without letting it get too hot. Set aside 10 g (⅓oz) flaked almonds.
  2. Mix the remaining almonds, caster sugar and flour together in a bowl. Add the whites of egg and the melted butter, stirring all the time. Let the mixture rest for at least 2 hours or, preferably, overnig
