This is an excellent way to cook different odd bits. If you find yourself with a piece of shoulder, some slices of neck, a lamb’s tongue, a piece of belly—none of which are substantial enough to make a dish on their own, combine them with other orphaned pieces to create a brilliant ragu. Ragu is a traditional Italian meat sauce, and it is infinitely variable. You can use the odd bits from one animal, or a mixture from different animals.
