The orange and cumin here add a layer of flavor to the sweetbreads, and the juice makes a simple orange butter sauce to serve with them. You can just serve them with the sauce, or serve them over some lettuce leaves, to contrast with the richness of the sweetbreads. To make ½ cup / 125 ml of clarified butter, start with ¾ cup / 6 ounces / 170 g unsalted butter and follow the instructions below.
