This is a very good introduction to pig’s feet. My friend François made this for lunch in Paris: pig’s foot bruschetta that you can serve with a salad or as an appetizer. You can decide just exactly how much chopped foot you want on each toast.

Place the chopped meat in a frying pan over low heat to warm through, and season with salt and pepper.

Heat the broiler to high.

Place the bread slices on a baking sheet and toast well on one side and lightly on the other. Spread the lightly toasted side of each slice with mustard.
