An Italian recipe insalati di nervi from my friend Francesco Tripoli inspired this recipe. Francesco sent me emails from Italy describing everything he was eating, especially the odd bits; it made me very envious. This is a good recipe to introduce people to pig’s feet: I served it to a friend who doesn’t eat pork except in Chinese dumplings, and even she liked it.
