This is a good way to serve rillons. The bitter endive and the sweet apple pair perfectly with the fatty, spicy, crispy pork. Sometimes I add some radicchio, or escarole. I serve this as an appetizer, so one rillon per person is enough, but if you wanted to make this a lunch dish you could add an extra two rillons and cut them in half.
