There are so many ways to cook pork belly. With this method, first you slow cook it so some of the fat renders and bastes the meat, then you cook it again on the grill, where the remaining fat is cooked until hot and crisp—a perfect combination. This is a good recipe for summer, when everyone else is buying up spare ribs and thinking that braising is only for winter. Let them eat the spare ribs with little or no meat—I’ll take the belly every time.
