Beef kidney slowly braised adds depth to this beef stew and becomes tender with the long slow cooking. You can adjust the ratio of meat to kidney up or down, and of course you can make it without kidney. Usually I serve it with mashed potatoes or over noodles, but if I have the time and energy I top it with Leaf Lard Pastry and use my pie bird to make a pie.
