I love wild boar, but in Canada the only boar available isn’t wild at all—it’s farmed. As a result, it doesn’t have the same gaminess as European boar, but farmed shanks are a good size for one per person. Unfortunately, no one seems to want this cut—they are all deboned and ground, so I must order them in advance from my supplier.
