Yet again, a recipe that reveals the power of bacon. As testicles are very mild, they need to be matched with ingredients that give them flavor. Many smaller purveyors are making specialty bacon that is double smoked, and it adds smoky fatty flavor; however, any good quality bacon or even a good cured country ham would work.
In a frying pan over medium heat, melt the lard. When it’s hot, add the onions, bacon, sage sprig, and sugar, season with salt and pepper, and cook until the onions soften and begin to color. Add the stock and bring to a boil; deglaze the pan, using a wooden spoon to scrape up the browned bits from the bottom of the pan. Continue to cook until the stock is reduced by half, then keep warm.
