A red currant bush thrives in my garden, so I have a guaranteed supply. These bright jewel-like, tart berries are becoming more popular, and I often see them at the farmers’ market. The season is short, but luckily they freeze well.

Place them in a single layer on a baking sheet in the freezer. When frozen, pack into freezer bags: they will keep for 6 to 8 months. Frozen berries are easy to remove from their stems. Add them to recipes directly from the freezer.
