If you’re a caponata or tapenade lover like me, you’ll love this chunky Mediterranean-style dip. I like to serve it as part of a spread of appetizers with hummus and pita chips—because honestly, as much as I love hummus, it’s become so ubiquitous that I’ve gotten a little bored with it. It’s nice to mix it up! This recipe makes a ton; leftovers are wonderful spread on toasted pita for lunch.
