Avocado toast has long been popular, but this recipe takes it up a notch with crispy bacon and tangy pickled onions. Adding mayonnaise might seem like gilding the lily, but a little goes a long way.
In a medium nonstick pan, lay the bacon in a single layer. Set the pan over low heat and cook until the bacon starts to buckle and curl. Use tongs or a fork to flip each slice; cook on the other side until evenly browned and crispy. Remove the bacon from the pan and drain on a paper towel–lined plate.
