Long ago, probably when I was a teenager, someone told me that you burn off more calories chewing celery than you do eating it. I’m pretty sure this is a myth, but it has stuck with me and I continue to find ways to eat “negative calories.” I’ve added copious amounts of calorie-rich walnuts and cheese to this salad, which I know defeats the whole purpose, but somehow it still seems virtuous.
