When cooking corn on the cob for a crowd, roasting in the husk is the way to go. The unshucked corn cooks directly on the oven rack (no dirty pans!) and the peeled-back husks make for a fun presentation. I like to brush the roasted cobs with a bright and citrusy herb butter. It brings out the sweetness of the corn and makes it taste just like summer.
