Cornbread is a weeknight dinner staple at my house. In fact, my kids love it so much that I’m constantly swatting their hands away from the breadbasket so that they don’t fill up. Here, I’ve jazzed up my basic recipe with some jalapeño peppers and jack cheese. I know that baking at dinnertime might seem a little ambitious, but you can make this batter in just 15 minutes. And I always serve cornbread in place of a starch.
