  • 4 red onions
  • 8 new potatoes
  • 3 tablespoons tomato sauce (ketchup)
  • 1 tablespoon maple syrup
  • 3 tablespoons soy sauce
  • 80 g butter
  • 1.2 kg beef short ribs
  • Pepper

1 flameproof casserole dish

1 chopping board


Preheat the oven to 120°C.

Cut the unpeeled onions in half and rinse the potatoes.

Mix together the tomato sauce, maple syrup and soy sauce.

Melt the butter in a flameproof casserole dish and brown the ribs on all sides. Cover with the sauce and season with pepper.

Arrange the onions and potatoes around the ribs, cover and cook in the oven for 5 hours. Check that the ribs don’t stick and add a little water if necessary.
