  • 4 red onions
  • 1 rack of milk-fed veal
  • 80 g butter
  • 200 ml white wine
  • 8 garlic cloves
  • 1 handful hay
  • 1 bunch coriander
  • Salt and pepper

1 flameproof casserole dish

1 chopping board


Preheat the oven to 160°C.

Quarter the unpeeled onions.

Brown the rack of veal on all sides in butter in a flameproof casserole dish. Add the white wine, onions and unpeeled garlic cloves, surround with hay and coriander, season with salt and pepper, cover and cook in the oven for 1 hour 30 minutes.
