Scrape and wash the radishes. Cut the kipflers and turnips in half and cook them in boiling water for 10 minutes.
Cut the chorizo into matchsticks.
Place the lamb racks in a baking dish, season and surround with the vegetables and chorizo. Dot with small pieces of butter all over.
Sprinkle with the chopped chives to serve.
