  • 2 onions
  • 4 blood oranges
  • 1 chicken
  • 3 tablespoons olive oil
  • Fine sea salt, cracked pepper

1 baking dish

1 chopping board


Preheat the oven to 160°C.

Peel and slice the onions.

Cut 2 oranges into cubes. Zest and juice the other two.

Place the chicken in a baking dish. Brush with the olive oil, season with salt and pepper and add the orange zest.

Arrange the sliced onions and cubes of orange around the chicken. Add the juice and bake for 1 hour 15 minutes.
