  • 3 onions
  • 300 g artichokes in oil
  • 1 rabbit, cut into 8 pieces
  • 1 tablespoon fennel seeds
  • 3 tablespoons olive oil
  • 200 ml white wine
  • Salt and pepper
  • A few sprigs of flat-leaf (Italian) parsley

1 baking dish

1 chopping board


Preheat the oven to 160°C.

Peel and thinly slice the onions. Slice the artichokes.

Place the rabbit in a baking dish, add the artichokes and onions, sprinkle with fennel seeds, drizzle with olive oil and pour in the white wine. Cook in the oven for 45 minutes.

Scatter with sprigs of parsley.
