  • 1 orange
  • 4 tablespoons olive oil
  • 1 red onion


Zest the orange and mix it with the olive oil. Peel the orange with a knife, removing the pith at the same time and cutting out the skinless segments.

Peel the red onion and slice a few rings. Mix the rocket with the zesty olive oil, add the orange segments, season with salt and pepper and scatter with a few onion rings.
