  • 3 red onions
  • 8 new potatoes, unpeeled
  • 4 fillets of salt cod, soaked to desalt
  • 1 bunch lemon thyme
  • 4 bay leaves
  • 150 ml olive oil

1 baking dish

1 saucepan

1 chopping board

1 sheet foil


Peel the red onions and slice into rings.

Cook the potatoes in boiling water for 20 minutes; they should still be firm.

Preheat the oven to 180°C.

Lay the fish in a baking dish, add the halved potatoes and scatter with the onion rings, thyme and bay leaves.

Drizzle generously with olive oil and bake for 20 minutes.

Cover with a sheet of foil and bake for another 10 minutes.
