  • 3 garlic cloves
  • 1 kg mixed tomatoes
  • 4 good-looking mackerel, cleaned
  • 1 tablespoon herbes de Provence (mixed dried herbs)
  • 5 bay leaves
  • 150 ml olive oil
  • Fine sea salt

1 baking dish

1 chopping board


Peel the garlic and slice it into rounds. Slice the tomatoes into rounds. Slash the skin of the mackerel.

Preheat the oven to 160°C.

Lay the tomatoes in a baking dish, add the garlic, place the mackerel on top, sprinkle with the mixed herbs and bay leaves, drizzle with olive oil and season with fine sea salt.

Cook in the oven for 20 minutes.
