Ingredients

  • 1 tin pineapple rings
  • 3 eggs
  • 125 g + 50 g caster sugar
  • 100 g flour
  • ¼ sachet baking powder (½ teaspoon)
  • 250 ml milk
  • 40 g butter, melted

1 baking dish

Method

Preheat the oven to 160°C.

Drain the pineapple slices.

Whisk the eggs and 125 g sugar until pale and creamy. Add the flour, baking powder, milk and melted butter.

Pour the batter into a baking dish, arrange the pineapple rings on top and bake for 35 minutes. Sprinkle with the remaining 50 g sugar and bake for another 5 minutes.
