Ingredients

  • 400 g pitted prunes
  • 500 ml good red wine
  • 100 ml kirsch
  • 1 teaspoon cinnamon
  • 1 pinch nutmeg
  • 50 g ginger
  • 3 star anise
  • Zest of 1 lemon
  • 120 g brown sugar

1 flameproof casserole dish

Method

Put all the ingredients in a flameproof casserole dish, bring to the boil, cover and cook over low heat for 1 hour.

Keeps for 1 month in the refrigerator.
