Ingredients

  • 500 g (1 lb 2 oz) caster (superfine) sugar
  • 500 ml (17 fl oz) water

Method

Combine the sugar and water in a large saucepan over high heat, stirring until the sugar has dissolved. Bring to the boil then immediately remove from the heat. Cool and store in an airtight container in the refrigerator until required.
