Pour the milk into a half gastronorm tray or a small roasting pan. Heat the tray of milk over two gas burners until the milk comes to a high simmer. Turn off the heat and allow the milk to cool: as it does, a skin will form over the top. Cut a sheet of silicone paper to fit the size of the tray and place the silicone paper directly onto the milk. The skin should stick to the silicone paper. Carefully lift off the paper and dry the milk skin, on the paper, under heat lamps or in a 100°C (200°F/Gas ½) oven for about 10–15 minutes.

You should be able to repeat this step three times with the same milk.

Once the milk skin has fully dried, remove the skin from the paper and place in an airtight container. Set aside until required.
