  • 1 litre (35 fl oz) milk

Method

Pour the milk into a half gastronorm tray or a small roasting pan. Heat the tray of milk over two gas burners until the milk comes to a high simmer. Turn off the heat and allow the milk to cool: as it does, a skin will form over the top. Cut a sheet of silicone paper to fit the size of the tray and place the silicone paper directly onto the milk.
