Soak marrow bones in cold, lightly salted water overnight in the refrigerator. Drain the water and place the marrow bones under cold running water for 1 hour to help flush the blood from the marrow. Push the marrow out of the bones using your thumb or a piece of dowel.
Soak the marrow a further 12 hours, in the refrigerator, in 3 changes of cold milk. Drain the marrow and place in a cold smoking apparatus. Lightly smoke for 1 hour using maple wood chips. Put the smoked bone marrow in an airtight container and refrigerate until required.
