In batches, blend the tomatoes in a blender or food processor on high. Line a fine sieve with 2 layers of fine muslin (cheesecloth) and place over a stainless steel bowl. Carefully pour the blended tomatoes into the lined sieve and put them in the refrigerator while you allow the mixture to slowly drip through the sieve. This could take up to 4 hours. You want the liquid to be clear so do not put any pressure on the tomatoes.
